Just wondering what airline do you suggest i fly with?

Cathay Pacific is probably the best, although there are many other airlines. You'll also save a bundle if you book out of LAX instead of Las Vegas and find a cheaper way to get to LAX.

UA, AA, Northwest and Continental all have direct flights to Beijing. Delta flies into Shanghai. They are competing in pricing as travel business is very slow now. I think you should take flight that is most convenient for you. From Las Vegas, I would suggest you to take United Airlines flight, flying out Los Angeles. If someone can drive you to LAX, you may consider China Airlines flight. They usually have pretty good rate.
Cathay Pacific is a good airline. Singapore is also but you would have to fly into Singapore before you get to Beijing. I think Japan Airlines or ANA would be good as well. You will have to fly another airline from Las Vegas to either Los Angeles or San Francisco to catch a JAL or ANA flight to Tokyo where you would then fly to Beijing.
I took Northwest there from Portland. Look into different prices.
